As required of a traditional estate, we like to implement a successful mix of innovation and highly specialist manual work. Our vinification methods are scrupulous and elaborate: winemaking is an art that, as well as passion, requires a great deal of skill and professional expertise.
After careful, exclusively manual work on the vines, pruning, removal of lateral shoots, thinning, defoliation, etc., the grapes arrive in the winery, where every single one is carefully sorted and selected.
Purpose? We need to be sure that only excellent harvested grapes are placed in our vats. We prefer fermentation in open vats and careful pressing to get the maximum aroma of the grapes.
