During the harvest, we only choose the best bunches, travelling the length of the vineyards several times, with professional expertise and our usual passion. The work of expert hands, and the search for the perfect degree of ripeness are what give us great wines.
The harvest begins around 20 September and continues until early October. Grapes, harvested in purity into small crates, are pressed and then fermented in steel barrels at controlled temperature for 15-20 days.
The ageing stage takes place in both steel and wooden barrels. This is followed by a period of at least 6 months’ refinement in the bottle. Our techniques allow us to grow quality grapes destined to our DOCG Chianti and our IGT (Typical Geographic Appellation).
